Valentin Néraudeau,
Chief Executive of the M. RESTAURANT
Since his beginnings in Toulouse, chef Valentin Néraudeau has established himself among the great names of French cuisine. Trained alongside prestigious chefs such as Michel Guérard, Bernard Bach and the Pourcel brothers, he distinguished himself very early on.
In 2006, he became the youngest chef in France and a two-time finalist in the French Dessert Championship. He gained wider public recognition on France 3 with the program "13 heures avec vous" (1 PM with You), before shining as a finalist on Top Chef in 2013, where his creativity made a lasting impression. Passionate about seasonal produce, he draws inspiration from Mediterranean flavors and regularly incorporates citrus fruits into his dishes to add a fresh and tangy touch.

Every Friday, the concerts selected by Jean Szlamowicz (Académie du Jazz) make the ancient stones vibrate: swing, soul, gypsy jazz, or vocal jazz are in harmony with the chef's refined menu.

The restaurant is open to the public for lunch service from Tuesday to Saturday inclusive and by reservation.
